**Sheet Pan Lemon Garlic Chicken with Roasted Vegetables**
Ingredients:
14 chicken breasts
2 red peppers, sliced
2 lemons, sliced
1 pound baby potatoes, halved
4 cloves of garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Preheat your oven to 400°F (200°C). Place the chicken breasts, red pepper slices, lemon slices, and halved baby potatoes on a large sheet pan. In a small bowl, combine minced garlic, olive oil, salt, and pepper. Drizzle this mixture over the chicken and vegetables. Toss everything together to ensure even coating. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. Once done, let it cool and enjoy cold as a picnic dish.
New recipe! Red lentil granola. I know it sounds weird but it is really good! The recipe doesn’t make much, so I recommend doubling it. Tastes delicious on its own, but most excellent with some soy kefir.

I tried this and it was an epic fail for me. I can’t cook lentils. I used the lentils as a topping on my salad. So it wasn’t a total loss.
@Stefanie turned me on to stinging nettles which I can only get for a few weeks at the farmers market. I made these pancakes (into waffles) using the stinging nettles. They are really yummy. A good chutney on them would be great. I’m sure James could make a homemade one!
