I thought I would start a new thread with ideas for some favotite pre-made/packaged foods for those times when we need something fast and don’t have time to cook anything… or when we need to grab some thing to bring to work… or even just something to complement other things you have at home to make it a more complete meal.
even better if those items are available in big or popular stores such as Costco and Trader Joe’s for us here in the US.
I have to check out the hearts of palm pasta. How is the flavor? Carbs?
I have been eating a lot of bagged salad kits. basically the mix of greens and a few accompaniments as well as dressing are in the bag. I use about half the dressing (or replace it with something in the event it contains egg - - I try to avoid eggs just because I have gotten headaches in the past but will note that the crepes I had last week did not give me a headache!!! I may throw a can of sardines or tuna or salmon on top if I feel like it needs a little more oomph. This way I can quickly prepare lunch and still enjoy some relaxation time during work from home - - it also makes shopping easier for Jon since we are eating every meal at home. He does a 1x per week grocery run and while dinners are somewhat more elaborate, this simplifies figuring out the quantities of stuff needed for lunch.
I am also a big fan of nut thins and hummus, baby carrots and hummus, guac, and just having an assortment of seeds and nuts in the pantry to help jazz up a salad, my breakfast yogurt or simply to snack on.

Also, hard boiled eggs. I do 18 at a time in my Instant Pot then put them back in the carton and back in the fridge to be eaten as needed.
@Coach_Theia - you have WAY better options at your Costco! I looked high and low and came up empty. I also heard they have big boxes of frozen Kodiak cakes, but not at my store. Anyway, my best quick combo from Costco is this quinoa cup, sardines, halved grape tomatoes, and then up fresh spinach.
