Today’s meal. Trying to get in carbs but not the fat is challenging. Stuffed portobello mushroom tops (chickpea stuffing) roasted asparagus, cauliflower, quinoa and then I had some Mexican rice.

My lunch today after medium climbs workout plus endurance and Tour de Zwift on Richmond UCI:


Tostadas! On corn tortillas handmade in the traditional way by my CSA farmer Eduarado, sunflower “cheese”, brown rice, black beans, shredded and crisped seitan, and broccoli sprouts.

Too bad there is no GF version of seitan! We’ve used extra firm tofu to make crispy crumbles before. Squeeze out all the water, crumble it into a bowl, season, speed onto a cookie sheet and bake. It doesn’t get quite as crispy as seitan does, but it’s still good! :grin:

I love tofu. If the decreased fat is working for the pre diabetes I’m diagnosed with, then I will continue to use it sparingly. I do love and miss it but I can do that as a treat! Great idea.

I am so starving this week. Today I had cauliflower “steaks” after the workout along with some warmed chickpea mash and roasted broccoli. I did also have a cauliflower tortilla. I would plate on a different color plate.

Topping up the tank before lots of riding tomorrow. Dinner tonight: tempeh, broccoli sprouts, and homemade sauerkraut with mustard on homemade sourdough sandwich bread with baked delicata squash "fries"on the side.

Attention Vegans, Vegetarians and Foodies! No picture here but I wanted to share a link to a local store that mills its own flour. Many of their recipes call for their flour or grains but I have often substituted. There are MANY wins in here that I can attest to: Lemony Spiced Lentil Soup ( nice combo of flavours), Date Squares (great!), Classic Yoghurt Cake (plain, simple and yummy), Trail Mix Breakfast Cookies (great energy for a long ride…about to make those now!), French lentil Bolognese (amazing!). Thank you @kswhite! I just peaked at the lentils and they look delicious!!!

I now have a picture of the trail mix cookies. I used dates instead of cranberries, kodiak mix instead of flour, halved the sugar and sprinkled Maldon’s Sea Salt on top. The recipe said 12 but I made them smaller and got 24 out of the recipe. Also, because the dough needs to be chilled, I pop it in the freezer while the oven is heating up and the dough is firm enough to roll into balls.

Now to cool them…and pop them in the freezer to make them a little more inaccessible :joy:They don’t take long to defrost …and they taste pretty good frozen too​:woman_facepalming:t2:

Hey @gosimrr how did the teff sourdough bread turn out?

@Stefanie I have to make the starter. But I did make oat sorghum beer bread. It’s pretty good!

Chickpea shawarma with roasted sweet potatoes, spinach and tahini lemon dressing… this. Is a. Keeper. I ate all of it. I think I had 16oz of chickpeas today alone!

I wanted some type of comfort food. I came up with rice and beans. It’s actually so good. Of course I have cauliflower steaks cooking too.
